How about "unpleasant work environment". Has a better connotation than saying "stressful".
As for what NOT to write... the two most ridiculous ones I've seen on applications:
- "Fired for being drunk at work"
and
- "Fired for borrowing money from register"
No joke, people actually wrote the above.

At my job I do most of the hiring. I cannot stand to see someone put that a job was too stressful. I don't even like them telling me that during the interview. Another thing I don't like is when they put "quit" on the line that clearly states "reason for quitting". Morons don't get hired:)
